The model presented here provides tools to design and explore presence-absence and concentration-based sampling plans for microorganisms. Sampling plans are classified in terms of their ability to detect unacceptable (as defined by the associated microbiological criterion) lots of product, and the reduction in risk that may result from the removal from commerce of product contaminated with pathogenic organisms, in accordance with the sampling plan.
